Executive Chef Greg Luckey

Born in North Bay and moving to the big city as a child, Greg has returned to his roots to be closer to his family. Greg has spent many years in the kitchens of Burlington, ON most notably as sous chef at Canyon Creek Chophouse. Greg started cooking when his very active family was always busy with sports and he learned to cook between games. He then decided to do an apprenticeship expanding his knowledge and love for flavour.

In 2024 Chef Greg was awarded the Red Seal Certification by the College of Trades. The kitchen at 1886 is accredited as an official apprenticeship training facility for new cooks and aspiring chefs.‍ ‍

Chef Greg will lead the opening at Le Bouchon Bistro & Wine and hand the reigns over to newly crowned Executive Chef Jenn McCague.

When not sourcing new local ingredients Chef Greg can be found cheering his Maple Leafs and Blue Jays as well as spending time with his brothers on the ATV trails.

General Manager Catriona ‘Cat’ Coker

Born in Toronto and raised in Huntsville from the age of seven, Cat has deep roots in the community she now proudly serves. She began her hospitality career locally over 20 years ago, quickly discovering a natural passion for the fast paced environment and the ability to connect with guests through genuine conversation and relationship building. 

Over the years, Cat has built an impressive and diverse background in hospitality leadership. She has managed high volume operations as General Manager of a busy pub in Yellowknife, led large scale events at a major music festival in the Northwest Territories, and overseen operations at many top end golf courses. Cat is known for her hands on leadership style, leading by example with high energy and a focus on creating a positive, team driven environment. She is passionate about delivering exceptional customer service and believes that attention to detail is what transforms a good experience into a memorable one.  The opportunity to lead a fresh new concept in her hometown is both exciting and challenging.

When she’s not at the restaurant, Cat prioritizes health and fitness, spends time with her three young children, and enjoys baking, golfing and traveling whenever she can.

Executive Chef Jenn McCague

Muskoka-grown Red Seal Chef with classical French training at Stratford Chef School, Jenn has a proven track record of leading high-performing kitchens. Former Chef/Owner of the River Bend Bistro and Aroma Dining & Drinks, she brings extensive experience in menu development, team leadership, and delivering exceptional dishes in casual Muskoka - style dining.

Supported by over 20 years of business management experience, she offers a rare balance of creativity and operational expertise.
After time spent raising her daughter and owning a successful construction business, Jenn is thrilled to return to her culinary roots, bringing renewed energy, leadership, and passion to the kitchen.  

Jenn will be in the dish pit unless she’s walking her Pittie Reba or finding an afternoon to spend some time near a lake with friends and family.
